Recipe of Chocolate Mousse

Ingredients:
v  4 ounces (115 grams) bittersweet or semisweet chocolate, cut into small pieces
v  2 tablespoons (28 grams) unsalted butter, cut in small pieces
v  2 large eggs, separated
v  1/8 teaspoon cream of tartar
v  3 tablespoons sugar, divided
v  1/2 teaspoon pure vanilla extract
v  1/2 cup (120 ml) heavy whipping cream 

Garnish: (optional)
v  Whipped Cream
v  Fresh Raspberries
v  Shaved Chocolate

Instructions:
In a medium-sized stainless steel bowl set over a saucepan of simmering water, melt the chocolate and butter. Remove from heat and set aside to cool for a few minutes. Then whisk in the two egg yolks. Refrigerate while you whip the egg whites and whipping cream.
In the bowl of your electric mixer (or with a hand mixer), whip the two egg whites with the cream of tartar until foamy. Gradually add two tablespoons of sugar and continue to beat until stiff peaks form, yet the whites are still glossy and not dry. Set aside.
In another bowl, whip the heavy cream, remaining one tablespoon sugar, and vanilla extract until soft peaks form.  
Remove the chocolate mixture from the refrigerator, and stir a couple of spoonfuls of the beaten egg whites into the chocolate mixture to lighten it, and then fold the remaining whites into the chocolate mixture, gently but thoroughly. Fold in the whipped cream.
Spoon the chocolate mousse into six individual serving dishes or glasses. Cover and refrigerate for a couple of hours. You can serve with additional whipped cream, fresh raspberries and/or shaved chocolate.

Another healthy component of this delicacy is theobromine. It helps you to cure cough without any side effect of drowsiness as in the case of ceodeine. The best part of your favourite chocolate bar is its tryptophan content. Tryptophan, an essential amino acid, its consumption triggers the release of serotonin, a feel good neurotransmitter, in the brain that stimulate the central nervous system and makes you feel happy. I miss the mexican food....

When we are in our country generally does not value the things that gives us, we have about everything we want, our friends, our family, and something that seems so common: the food, so every day we got up and had breakfast almost without thinking of it, as an act machining. But what happens when for some reason we must leave our land and away from everything we want?, the first thing we miss is the last thing we notice when we're here: our food, these delicious tortillas that are not found anywhere, so the "mole" characteristic of our country. Because it is very typical to find stores in other countries of "mexican food" but in reality is never what we expect that flavor and that flavor that characterizes the Mexican cuisine.
So always it´s very important to evaluate all that we have with us to the most minimal.
